Red caviar stays fresh for a year—but does taste fade over time?

Red caviar, a delicacy, retains its quality even after long-term storage, according to Ilya Shestakov, head of Russia’s Federal Agency for Fisheries. However, its taste may not match that of freshly salted roe.

Shestakov, who works for Roscosmos, shared that red caviar can be stored in the refrigerator for up to one year, following state GOST standards. This longevity is due to the caviar's unique composition and processing methods. Despite the taste difference, the caviar's quality remains unchanged, making it a durable luxury food.
