  • 3 tablespoons olive oil

Instructions

  2. Transfer the lemon juice to a medium-sized bowl and slowly whisk in the olive oil. Season with salt and pepper, then mix in half of the dressing with the squash in the large bowl. Generously season the squash with salt and pepper again. Set aside.
  3. Prepare your grill pan or outdoor grill by heating it to high (450°F to 550°F).
  4. Using a slotted spoon, move the squash to the grill, reserving the large bowl and the remaining dressing. Cook uncovered, turning occasionally, until the squash is charred and tender, about 7 to 8 minutes total.
  5. Return the grilled squash to the large bowl, add the remaining half of the dressing, and toss until evenly coated. Let the squash cool slightly, around 15 minutes, then mix in the feta and mint. Taste and season with more salt and pepper if needed.
